This is an easy and vegetarian friendly udon noodle soup recipe that you can make from scratch within 25 minutes. The soup is versatile to be paired with other types of noodles and even rice.

Udon Noodle Soup Step-By-Step
Fill a pot with 700ml of water
include 4 shiitake mushrooms, 1 piece of kelp and 2 bok choy root ends
on the 15-minute mark, add 2 spoonful of soba sauce and a dash of salt
Once the soup has been boiled for 20 minutes in total, boil the remaining ingredients: shimeiji mushrooms for 3 minutes and bok choy for 2 minutes
While the soup is boiling, prepare a separate pot and boil the noodles for 30 seconds.
Plate accordingly and enjoy!
Onsen Egg
Prepare 3 cups of water and add it to a pot to boil.
Once the water boils, turn off the gas stove and add 1 cup of water to the pot.
Include 2 eggs and take them out in 15 minutes
Carefully crack each egg on the udon noodle soup and enjoy.
Tip:
- If you don't have soba sauce, it is replaceable with 1/2 tbsp of soy sauce and 1 tbsp of mirin.
- Feel free to add more salt if you prefer a saltier flavour.
- If you don't have bok choy, feel free to replace it with other vegetables, such as cabbage.
